Ice Ice Baby



Have you ever thought about Ice?


I lay awake thinking about ice. Don't tell Karen (DTK).


Yep, ice ......Indulge me for a moment.


I classify ice in three main categories .......


1. General ice, that's the white frosty stuff that you buy in bags at the supermarket. It's only really useful for cooling down glasses and filling ice buckets.


2. Then there is "good" ice that I can use for shaking and putting in some cocktails


3. And then we have thigh slapping, knee buckling, toe tingling, ecstasy inducing, rock hard, slow melting, brain tingling, mind blowing crystal clear ice, ice baby!!!



And why does it matter?


Well if you ordered a top shelf whiskey, brandy, rum or one of our fabulous Negroni's and wanted it with ice, if I used ice number one then it's going to water down your drink very quickly, hey, it's go holes in it!!!


But if I use a two inch cube of thigh slapping, knee buckling, toe tingling, ecstasy inducing, rock hard, slow melting, brain tingling, mind blowing crystal clear ice, then you are just going to love your drink. And BTW, the ice cube will probably last you for two drinks.


So! How does one make thigh slapping, knee buckling ...... OK I won't inflict the adjectives on you again, clear ice?


The short answer is pure water and directional freezing however, there are a number of methods on how to do it.


When you make ice in your freezer at home it gets frozen from every angle at once and any impurities or gasses get shoved into the middle for the cube and the result is cloudy ice.


If however, you insulate the sides and the bottom, the ice freezes from the top down.


One method is to buy a square cooly box, remove the top, fill it with pure water and then stick it in you freezer for a couple of days. The insulated sides and bottom of the box will mean that the ice freezes from the top down. This will give you a block of clear ice which you can then carve to the shapes and sizes that you need.


I know that I said that I am passionate about ice but I draw the limit at frost bite so at MORE, we will be using specialist ice moulds and the purest water to ensure that we have clear ice for your drinks.
